It’s All About the Marbling

The Prime Rib section weighs approximately 20 to 30 pounds and is taken from the top part, center ribs, of the cow at 30 to 42 months of age. While the legs have to be sturdy to support their mammoth frames, this area along the back is rarely challenged leaving the muscles tender and fatty.

A cut through here reveals some larger layers of fat covering tendons while thinner white lines create a mosaic against the red meat. These lines are what is referred to as marbling. They are most plentiful in prime grade permeating throughout the meat, tenderizing during cooking and creating that buttery texture you love.
