Remy Martin Cognac, the finest of brandies and a must for Happy Hour, is liquor distilled from white wine, and aged in oak casks. Known for its complex and unique flavors, cognac also has unique processing regulated under French law. The grapes used must be grown and harvested from either The Grande Champagne or The Petite Champagne regions in Southwestern France and casks are to be made from century old oaks in the Tronçais or Limousin forests.
Much of what Remy Martin started in 1724, is still followed today. Harvested grapes are distilled twice in small batches using copper stills. After removing the top and bottom layers, the heart, the essence, and most intense aromas from the grapes have been isolated. This resulting eau de vie or water of life, also called Champagne de Cognac, has an alcohol content of 70%.
Consistency and quality are imperative in creating and maintaining the finest cognacs. 2,000 eau de vie may have been produced by 1000 growers and submitted for consideration. A tasting committee along with the Cellar Master spend the next several months tasting and scoring each. Then, the Cellar Master works his or her magic, selecting the Champagne de Cognac for aging.
In order to maintain the aromas and flavors unique to the house, Cellar Masters are groomed for years before taking over from previous Cellar Masters. A single bottle of cognac can conceivably be made up of hundreds of eau-de-vie all produced and aged over different intervals of time.
